STRESSED = DESSERTS spelled backwards

Yeah, I haven’t been documenting so well on the blog (maybe out of shame), but I’ve been eating a lot of sugar of the past week.  I think two things are at play here:

1.  Opportunity:  I bought four boxes of Girl Scout Cookies last week.  They are now gone.

Here’s two of them.

2.  I am a bit stressed.  I don’t think I realized how stressed, until I thought about how much I’ve been munching over the past week.  We are getting busy at work, and I have too much to do.  Trying to fit it into my four day week is a big task. (To top it off Matt has been working five 10 hour days for the last three weeks, too!!)   Why am I only working 4 days per week?  I am taking this little 8 hour test in April (the professional engineering exam), which requires studying 20 hours per week (at least that’s our goal).  I am also getting very nervous about my brother leaving for Afghanistan next week.  Finally, there’s a personal thing that I’m growing very anxious about.  The more I think about it, the more anxious I get.

All of this together is not helping me.  I should take Beckey and Kelly’s advice, and probably write it out.

With so many things “out of my control”, I really should focus on what is in my control.  And one BIG thing should be my food.  I mean, no one is forcing these cookies down my throat . . .

So one announcement: I am going VEGETARIAN for Lent.  My friend Beckey encouraged me to challenge myself, and I think that this could be a good focus for healthy foods for a short amount of time.  One caveat is, that  I will allow myself to eat some fish if we are out at a restaurant.  I rarely if ever eat fish at home, so this could just be a once a week thing.

Vegetarian suggestions?

Okay, onto some food from yesterday:

Southwestern Shepherd’s Pie from the Slow Cooker.  I added broth since I was afraid of too many potatoes not cooking and used different dried chilis, so it’s a bit different than last time.

Eggplant parm & sausage sandwich from my lunch date with Matt (ate half of it for lunch yesterday and half for today).

VEGGIES/FRUITS for yesterday: banana, eggplant, red peppers, sweet potatoes . . didn’t eat a fifth one. ARGH!

And guess what came in the mail?!

I am now allowed to leave the country!  And go on our cruise in two months.

Okay, time to go run a few Valentine’s errands . . .

    Going veg won’t be too tough. Upon discussions with fellow vegetarians, we often remark that we forget we are vegtarians. It’s just so easy to be veg these days! We also often forget that other people eat meat, and it takes a few minutes to clue into the reason behind their eyebrow-raises when we serve meatless meals.

      Thanks. I have several friends who are vegetarian, and they always find something. Even if it’s a bunch of side dishes. I just want to be up for the challenge. (change in focus)

    Thanks for stopping by my blog. I couldn’t agree with your comments more! They should have said something like, “have a bite of the cake, then walk away”. By depriving yourself of something you really want, over and over, a binge is inevitable. Even the most self-controlled person will binge if they deprive themselves of their favorite foods. That show makes me mad sometimes.

    Congrats on the passport! The cruise will be AWESOME. Have a nice weekend.

    You’ll do great going vegetarian. There are so many great products out there and most recipes can be modified to be vegetarian. I find that even most restaurants have a vegetarian section.

    Oooohhhhh my goodness! GOOD LUCK! Call if you need someone to feel your pain. I’m not going to say it’ll be easy because I’m totally going through a meat craving right now and it’s tough. There ARE tons of options though. Side dishes are the best parts anyway, you know?

    One word of wisdom I just acquired within the last two weeks — Boca burgers bad, Gardenburgers good. Oh, and if I go veg, I’m totally eating fish, so I think you’re on track there. And, hello, it’s fish fry season! =)

      I also love Morningstar Farms Burgers! I just think of Sarah always ordering side dishes.

      I’ll let me you know how it’s going. We shall see . . . it’s only like 40 days (plus Sundays), right!

    YAY! What a great goal! You can totally do it!!! You will be able to find tons of vegetarian recipes from the food blogging world!! 🙂

    Yay for going veg for lent! It’s really pretty easy to follow a veg diet. Lots of beans and leafy greens will save your life 🙂

    I think going veggie will be fun! Do you like tofu? Portabello mushrooms? Sweet potatoes? There are so many vegetarian meals that taste so good!

      Any recommendations on tofu? I tried it once and was turned off by the rubbery texture. Did the person overcook it?
